Curau Cake


CURAU CAKE                                                                                  
                                                                                             
Massa                                                                                                                               
1kg Satin Creme Cake Fubá                                                      
450 ml Ovos                                                     
200 g Óleo                                                        
225 ml Água                                                     
Rendimento: 1875 kg                                   
                                                                                             
1ª Etapa Curau                                                                               
                              
400 g Milho Verde                                                        
200 ml Leite de Côco                                                    
300 ml Leite Fresco                                                       
 Rendimento:  900g                                      
                                                                                             
2ª Etapa Curau                                                               
180g Gema de ovo                                                       
250g Ovos                                                         
500 ml Chantypak                                                         
300g Açúcar                                                     
 Rendimento: 1.230g                                    
                                                                                             
                                                                                             
MODO DE FAZER:                                                                                         
                                                                                             
Massa:                                                                                              
Misturar todos os ingredientes, na batedeira (utilizando o batedor raquete) na velocidade lenta por aproximadamente 3 minutos até obter textura lisa e reserve.           

Curau:                                                                                
Bater a 1ª etapa no liquidificador, bem batido, acomodar a mistura numa vasilha plástica e adicionar os ingredientes da 2ª etapa e misturar manualmente até homogenizar.

MONTAGEM:                                                                                 
1 - Untar a forma com Untak e polvilhar o açúcar.                                                                                         
2 - Colocar o Curau na forma.                                                                                  
3 - Com ajuda de uma manga de confeitar colocar o Satin batido sobre o Curau.            
4 - Assar em banho-Maria por aproximadamente 50 minutos.                                                                               
                                                                                             
Rendimento:      3.800    g ou 63 fatias de 60 g
